As the thick, sunny mirage began to lazily drift from the cobbled streets of the old town to become the sunset glare on the river’s surface, nanny Asmati sat with her embroidery in the shade of the pomegranate tree, quietly recounting stories of her youth. Gradually, the neighbours' children gathered around her one by one, followed by all the residents of the courtyard. Cats lay on wooden fences, catching the last rays of the sun through the hanging sheets, while the stories intertwined, blending with the evening air filled with the scents of figs and oleanders, laughter and song floating in the summer twilight between the glowing windows…

These memories of the Georgian country house have inspired the design concept of Gobi restaurant - the first bureau’s project in Europe. The restaurant’s philosophy is rooted in its name: the gobi is a traditional wooden dish used for shared meals, symbolising the highest degree of trust and hospitality. The word “gobi” stems from “megobroba”, which translates from Georgian as “friendship”.

The project's ideological core is the tradition of Georgian cuisine, reimagined by chef Luka Khinkiladze, who has relocated to Tallinn to lead the gastronomic heart of the first Georgian restaurant in the city. Our task was to capture the spirit of the Georgian feast within a modern design framework.

The space is imbued with elements of Georgian cultural heritage: light brick walls reminiscent of old Tbilisi streets, clay jars from pottery shops, a bar stand panel inspired by buildings of volcanic tuff, a traditional stone oven, and a cave wine room with an exclusive collection of wines directly from Georgia. The décor also includes genuine vintage pieces. All of this is woven into the stylish canvas of an industrial loft, featuring concrete columns, large windows, and exposed utilities on the ceiling.

For decoration, natural materials with their original textures were chosen, with the fireplace as a focal point, symbolising warmth and cosiness. Furniture was carefully selected, with many pieces custom-made according to our designs. The project was managed entirely remotely, and we are proud to note the precise match between our 3D visualisation and the final implementation.

Gobi has become a unique establishment in the Estonian capital. The author’s menu, the country’s only collection of niche Georgian wines, its central location in Tallinn, vintage décor, and bespoke furniture give the restaurant reason to aspire for a Michelin star, offering its guests a chance to experience Georgian culture.
